William Hughes is the Executive Chef of the Grill at One. A Rochester NY native. He lived in California for 5 years where he obtained a culinary degree from Le Cordon Bleu and worked at some of Sacramento’s top restaurants; Lucca, the Waterboy and Mulvaney’s B&L. In 2010, William brought back the California mindset of proper ingredients and technique to Rochester. Landing at One, he was the Sous Chef to Chefs Brian Antinore and Jay Cohen. Most recently William was co-chefs with Charlie Saccardi at Benedetto’s on Alexander street.
His innovative dishes are made with the freshest local ingredients, including seafood from Boston and produce from local area farms. Changing the menu with the seasons, everything is always fresh to both the mind and the palate. His engineering degree is also evident as he his always looking for ways to make a dish better and be on the edge of modern trends. His time in California and his Italian heritage are both apparent in his food and style of cooking. When not at the restaurant, William likes to spend time with his girlfriend. family and dog Jackson. He also plays the drums, paints, enjoys camping, concerts, festivals and is an amateur photographer. William and his kitchen team are excited to bring their talent to your table, here at The Grill at One.
